One of the best natural salts comes from the ponds (salinas in Spanish) of San Felipe, Mexico where the small solar ponds are located within the ecologically protected Northern Reserve of the Sea of Cortez, just North of San Felipe, Baja California, Mexico. How is sea salt to harvested:
once the sun and the desert breezes evaporate the water, the salt which contains numerous essential natural trace elements is harvested, then dried and packaged locally. Bagging the harvested salt is a hand process. In 1974, the Mexican government designated portions of the upper Sea of Cortez as a protected area. In 1993, the United Nations Educational, Scientific and Cultural Organisation (UNESCO), designated over 3 million acres of the upper Sea of Cortez and the Colorado River Delta as a Biosphere Reserve.
The protected area has since been extended Southerly to San Felipe Bay and is under the protection of Federal Mexican governmental agencies including the National Commission of Protected Natural Areas and the Secretary of the Environment, Natural Resources and Fisheries. The evaporation ponds (called Salinas) within this highly protected region produce an exquisite salt. Pure, clean and having a special sunny flavor. By the way, the world's largest solar sea salt operation is located on the Pacific coast in Guerrero Negro, Baja California, Mexico.
