 Holiday Recipes

Roasted Red Bell Pepper Dip
1tsp extra-virgin olive oil
5 cloves garlic, peels intact
3 red bell peppers, roasted, peeled and seeded
½ tsp ground cumin
4oz cream cheese, room temperature
2 tbsp sour cream or crème fraiche
Salt & freshly ground pepper

Directions:
Preheat oven to 350 degrees (F). Sprinkle the olive oil over the garlic cloves and wrap tightly in aluminum foil. Place in the oven until the cloves are soft (40-60 minutes), let cool.

Squeeze the soft garlic cloves from their peels into a blender or food processor fitted with the metal blade. Add the red peppers and cumin and purée. Add the cream cheese and blend until smooth. Transfer into a small bowl and fold in the sour cream or crème fraiche. Salt and pepper to taste. This dip will keep in an air tight container, refrigerated for 2 to 3 days.

TIP: this simple recipe offers several serving options; toss with pasta, and serve with crusty bread and fresh green salad. The blend of roasted peppers and garlic make for a flavorful topping for baked potatoes. To save time, buy roasted peppers in a jar.

Mexican Pizzas
1lb spicy pork sausage
1 onion chopped
3 cloves garlic, minced
1- 15oz can pinto beans, beans
1- 16oz can refried beans
1 cup Tejano salsa mild or medium
½ cup Tejano Taco Mex
¼ cup vegetable oil
6 flour tortillas
3 cups shredded Cheddar cheese.

Directions:
Preheat oven to 400 degrees. In a heavy saucepan, cook pork sausage with the onion and garlic until the pork is thoroughly cooked, stirring to break up the meat. Drain well.  Add pinto beans, refried beans, salsa and Taco sauce and mix well. Bring to a simmer and cook for 5 minutes.

In another skillet, heat the vegetable oil to 350 degrees. Fry tortillas, turning once, about 2 minutes until crisp, remove and place on a baking sheet. Divide pork mixture among the fried tortillas and top with cheese. Bake pizzas at 400 degrees for 10-15 minutes or until the cheese melts.

TIP: these little pizzas are like Mexican tostadas without the shredded lettuce and tomatoes. Serve with guacamole and sliced jalapenos.

Tex-Mex Christmas Tea Cakes
1cup softened butter
¾ c powdered sugar
1tsp vanilla
2 c flour
¼ c cocoa powder
¼ tsp salt
1/8 tsp nutmeg
1c finely chopped pecans
36 chocolate kisses (unwrapped!)
1c powdered sugar
2Tbsp cocoa powder
1 tsp cinnamon

Directions:
Preheat oven to 350 degrees. In a large bowl, combine butter and powdered sugar; beat until fluffy, add vanilla and mix well, stir in flour, ¼ c cocoa powder, salt and nutmeg and mix until a dough forms, add pecans. Cover and chill several hours in the refrigerator.

Form dough into 36 balls. Wrap each dough ball around a kiss, completely covering the chocolate kiss. Place on a baking sheet, bake at 350 degrees for 11-14 minutes or until just set.While cookies are baking, combine 1 cup powdered sugar, 2Tbsp cocoa powder and cinnamon in a shallow bowl; mix well. When cookies are done, remove from baking sheet and drop into the powdered mixture, roll to coat. Then set cookies on a wire rack to cool. Once cool, roll the little cakes into the powdered mixture once more.

TIP: these little melt-in-your-mouth tea cakes have an intense flavor sensation. Add these to your Christmas cookie tray.

Texas Winter-Spiced Cider
1gl fresh apple cider
2 cups fresh orange juice
¼ cup maple syrup
½ tsp lemon extract
5 cinnamon sticks
3 tsp whole cloves
½ tsp whole spice

Directions:
In a large roasting pan or kettle, combine apple cider, orange juice, maple syrup and lemon extract. Place the cinnamon sticks, cloves and allspice in a cheese cloth, tie with string and add to the kettle. Cook, uncovered over medium heat for 15-20 minutes. Discard spice bag.

TIP: do not boil this mixture. Serve in mugs.
Adults: add bit of "spirit" for a bit more warmth!
