Ingredients:
1/2 cup diced zucchini
1/2 cup diced red or yellow bell pepper
1/2 cup frozen corn, thawed
1 jalapeņo pepper, seeded & chopped
3 Tbsp Tejano salsa (view product)
3/4 cup reduced-fat Mexican cheese blend
2- 8inch fat-free flour tortillas
Directions:
Combine zucchini, bell
pepper, corn and jalapeņo pepper in a small
bowl. Stir in cheese and salsa, mix well.Soften
the tortillas according to package
directions, spoon vegetable mixture down the
center of the tortillas evenly.Fold in the
bottom, then roll up burrito style. Serve
the wraps warm or cold. Serving: 2.
Note:
Mexicans typically do not serve a salad
course with their meals. If a green salad is
served, it usually takes the place of the
vegetable. As a result, many of their salads
feature a wide variety of vegetables.
