Recipe
Spicy Sunshine Breakfast Omelet

¾ cup Tejano salsa (click here for product)  medium or hot

1 cup marinated artichoke hearts, drained and chopped

¼ cup Parmesan cheese, grated

1 cup Monterey Jack cheese, shredded

1 cup sharp Cheddar cheese, shredded

6 large eggs

1 – 8oz sour cream

1 cup low fat sausage, cut into bite-size


Directions

Preheat oven to 350 degrees. Grease a 10” casserole dish (oven safe). Spread salsa on the bottom. Sprinkle chopped artichoke evenly over salsa. Next, sprinkle Parmesan cheese over artichoke then the Monterey and Cheddar cheeses. Add the sausage (we use homemade turkey sausage; if using fatty sausage, cook first and drain grease before spreading in casserole). Blend eggs and sour cream with blender until smooth. Pour over cheeses and bake uncovered for 30-40 minutes or until set.

Use “broil” setting for 1 minute or less at the end to form a “golden top”. Watch carefully.

Breakfast was never this good!!

Last year we experienced something possibly many of you have encountered already. One of our little angels in the family was diagnosed with ADD (Attention Deficit Disorder). We spent many hours researching for information and alternative options to the medication our child  was receiving.

A few cleaning tips:  make your own with products from the pantry!
* For chrome and stainless steel cleaning: dip a soft cloth in undiluted white vinegar, then wipe surface.
* For brass cleaning: make a paste (consistency of toothpaste) with fresh lemon juice and cream of tartar. Apply to surface, leave on for 5 minutes. Wash with warm water. Dry with a soft cloth.
* For lime and mineral deposit removal: soak paper towels in vinegar. Apply the paper towels to the lime deposits around the faucet. Leave in place for approximately one hour. The deposits will be softened and can easily be removed.
* For aluminum cookware cleaning: combine 2 tbsp. of cream of tartar and 1 quart of water in cookware. Bring to a boil and simmer for 10 minutes. Wash and dry as usual.
* For toilet bowl cleaning: sprinkle baking soda into the toilet bowl. Add vinegar. Let sit for 5 minutes and scour with toilet brush.
