This month friends, we’ve all gone nuts! Texas pecan nuts that is! So many of you have inquired and waited for the 2004 crop to come rolling in, well we received our pecans yesterday! This year, our friends at Rio Grande Organic Pecan company have provided us with Western, Cheyenne and Wichita pecan crops from their orchards. They are converting their orchards into “certified organic” however this being the end of their first conversion year, we call these pecans “naturals”. In two more years, they will be certified organic. They do not use any chemical fertilizer in the orchards nor spray chemical pesticides. There is no mistaking the flavor of these fresh, pure pecans. This crop was harvested on 10.28.04, dried for 5 days, shelled, and delivered to us on 11.09.04…now that’s we call FRESH!

Texas Pecans – Nutrition & Facts
  •  90% of the fats in pecans are unsaturated (about 60% monounsaturated/30% polyunsaturated).
  • A serving of pecans (30g) provides about 25 percent more oleic acid than a serving of olive oil (one tablespoon).
  • Pecans are cholesterol free, sodium free and fiber-rich.
  • Pecans are a valuable plant protein source.
  • Pecans have more than 19 vitamins & minerals.
  • They are an excellent source of gamma tocopherol, an important type of vitamin E.
  • They contain concentrated amounts of natural plant sterols, touted for their cholesterol-lowering ability and contain a variety of phytochemicals.
  • Nuts are recommended by the American Heart Association and U.S. Dietary Guidelines as a desirable source of heart-healthy unsaturated fat.

Pecans can double the cholesterol-lowering effectiveness of a traditional heart-healthy diet, according to a study published in The Journal of Nutrition, September 2001.
Pecans freeze beautifully – simply take out what you need, for baking or as I do, for a great mid-day snack and re-seal the bag.

A few great recipes to add to your index cards:

Basil and Texas Pecan mixed Green Salad 
10 ounces mixed salad greens
1 tablespoon fresh basil, coarsely chopped
3/4 cup freshly grated mozzarella cheese
1/2 cup grated fresh Parmesan cheese
4 large tomatoes, cut into bite sized pieces
Salt, pepper to taste
1 cup chopped, toasted pecans (click here to buy)
1/4 cup basil flavored olive oil
Mix together all ingredients. Toss lightly to coat with olive oil.

Texas Pecan Country Chicken
I
ngredients:
4 boneless, skinless chicken breasts
3/4 teaspoon salt
1/2 teaspoon freshly ground pepper
8 ounces fresh mushrooms, chopped
1/2 small onion, diced or 6 green onions
2 tablespoons butter
4 ounces cream cheese, softened
1 tablespoon French style mustard
1 tablespoon snipped fresh thyme or 1 teaspoon dried thyme
1/2 cup butter, melted
1 1/2 cups finely diced Texas pecans (click here to buy)
1 cup fine bread crumbs
1/4 cup minced fresh parsley

 Directions:
On hard surface with meat mallet, pound chicken to 1/4 inch thickness. Sprinkle with salt and pepper. Sauté mushrooms and onions in butter. Cool. Mix with cream cheese, mustard and thyme.  Divide into 4 equal portions and spread on each piece of chicken. Fold over ends and roll up, pressing edges to seal.
Mix pecans, bread crumbs and parsley in a bowl. Dip chicken in butter, then into crumbs, turning to coat. Place on greased baking sheet seam side down. Bake at 350 degrees for 35 minutes or until done. Makes 4 servings. Serve with rice and tossed salad.

Texas Pecan Cream Cheese Pie
Ingredients:
1 - 9” pie shell, baked at 375 degrees for 10 minutes
2 – 8oz. Philly cream cheese blocks.
¼ cup sugar
4 eggs
3 tsp. vanilla (best results using Mexican vanilla)
¾ cup Karo syrup.
2 Tbs. sugar
3 ounces chopped pecans (click here to buy)

Directions:
Combine cream cheese, ¼ cup sugar, 1 egg, and 2tsp vanilla in mixer bowl. Beat until smooth.
In another bowl, beat 3 eggs, syrup, 2tbs sugar and 1tsp vanilla until well mixed.
Pour cheese mixture into pie shell and spread evenly. Sprinkle with pecans. Stir syrup mixture again and very carefully pour through a fork over the pecans. Bake at 350-375 degrees until set (approx. 40-45 minutes). Serve chilled. Decorate with fresh mint leaves and fresh Texas pecans.

Orange Sugar Pecans
Ingredients:
¼ cup fresh orange juice (1 orange)
Grated orange rind
½ cup sugar
2 cups Texas pecans (click here to buy)

Directions:
Mix juice, sugar and grated rind in a cooking pot. Bring to a full rolling boil. Boil for one minute. Add Texas pecans. Stir gently and turn until all liquid is absorbed. Pour on cookie sheet. Separate with a wooden spoon and let harden
