Mexican Cheese lesson

Mexican cheeses are gaining immense popularity throughout the USA as it is one of the most frequently used ingredients in Mexican cooking. Soft, white, part-skim Mexican cheese is sold under a variety of names and can now be readily found in supermarkets. Mexicans use a cheese that melts and is similar to the American Jack Cheese or Longhorn Cheddar.

 

Asadero Cheese: mild, firm cheese molded into a log and sold sliced. Similar to a Provolone cheese, it melts well and used in dishes such as quesadillas, and nachos. Perfect on a hamburger or a sandwich as well.

Cotija Cheese: firm, salty cheese, similar to a Feta cheese. Used especially when crumbled over soups, salads and beans. Cojita Anejo is another version of Cojita that has been aged for a longer period of time.

Enchilado Cheese: dry, crumbly white cheese with a coating of mild red chili or paprika which adds a spicy flavor. Crumble over Mexican food, soups and salads. Try this one over tostadas!
Panela Cheese: mild, moist cheese with a sweet, fresh milk flavor. Texture resembles fresh Mozzarella but does not melt when heated. Use in sandwiches, salads and with fruits. Cut in cubes and add to beans or chili just before serving.

Queso Fresco: soft, moist with a mild, salty flavor. It is the most popular Mexican cheese, also known as Queso Ranchero. It does not melt when heated but rather used as a topping or filling in cooked dishes. Use as a filling in crepes, crumble on to rice or re-fried beans, cube into soups, chilis or stews and add to steamed vegetables.

Queso Blanco Fresco: firm, moist cheese used in cooked dishes. Often fried because it holds its shape under heat. Or crumble it over fruits, beans, salads or serve as a snacking cheese.

Queso Blanco: mild, creamy white cheese similar to Cheddar or Jack. Used in sauces, blends beautifully with peppers and chilis.

RECIPES: with the Holiday Season upon us, your family favorites will always be the staple of this special meal however here are some before, after and tag-alongs to make your table even more spectacular this year:

 

Sausage & Potato Breakfast Tacos

½ lb chorizo (Mexican sausage) or pork sausage

3 tbsp oil

1 large potato, diced

¾ cup Tejano salsa (medium)

6 eggs beaten

6 flour tortillas

 

Directions:

Remove sausage from casing (if applicable). Brown in skillet, crumbling with a fork. Drain fat and remove onto a paper towel.

Heat oil in skillet. Add potato and salsa. Cook until potatoes are tender. Add sausage and eggs. Cook until eggs are done. Warm tortillas (using our tortilla warmer) in microwave or in a clean skillet over the stove, fill with the potato mixture, add grated cheese of choice and serve (serves 6).

Avocado Soup (make just before serving, may discolor if left to stand)

2 large ripe avocados

1 ¼ cup crème fraiche

4 cups well-flavored chicken stock (homemade is best)

1 tsp salt

Juice of ½ lime

Small bunch of cilantro

½ tsp freshly ground pepper

 

Directions:

Cut the avocados in half, remove pit and flesh. Chop the flesh coarsely and place in food processor with 3-4 tbsp of the crème fraiche until smooth.

Heat the chicken stock in a saucepan. When just about to simmer, stir in the rest of the crème fraiche and the salt.

Add the lime juice to the avocado mixture, mix, and then gradually stir the mixture into the hot stock. Heat gently, avoiding the boiling point.

Pour the soup into individual heated serving bowls and sprinkle with cilantro and fresh pepper. Serve immediately (serves 4).

Bloody Maria Cocktail

1 cup tomato juice, chilled

1 tsp Worcestershire sauce

4 tbsp Tequila

Few drops Tabasco sauce

Juice of ½ lemon

Pinch of celery salt

Salt and ground black pepper

Ice cubes and 2 leafy celery stalks

 

Directions:

Pour the chilled tomato juice into a large pitcher and stir in the Tequila. Add the Worcestershire sauce and stir well. Add a few drops of Tabasco sauce, the lemon juice. Taste and season with the celery salt, salt & pepper. Serve over ice cubes with a celery stick (serves 2).
