Mexican onion soup recipe

Ingredients:
3 large yellow onions
2 cloves garlic
1/4 cup butter
2 cups tomato juice.
2 cups beef broth
1 cup water
1/2 cup Tejano salsa (view product)
1 cup grated Monterrey Jack cheese.

Directions:
Remove the skins from the onions and slice into thin rings. Peel the garlic and mince. In a large frying pan, melt butter over medium-low heat, add onions and cook for 20 minutes, stirring frequently until tender and brown. Stir in tomato juice, broth, water and salsa. Bring to a boil, then reduce heat to low. Simmer uncovered for 20 minutes. Top with grated cheese before serving

Tip: serve with warm tortillas, quesadillas or crusty bread. Have extra grated cheese at the table!
