Pino’s Sauce: ok friends, if you live or have ever lived in Houston, you will remember Pino’s Italian restaurant on Westheimer and Hillcroft. After being closed for five years, Pino and his family have asked us to begin co-packing their famous sauce. As in the Cheers’ bar where everybody knows your name…in Houston, most of the 4.5M people know Pino’s as well, an icon for 45 years. RECIPES
Since the children are starting back to school, we thought we would include recipes just for them this month. Take time out and make these recipes with your children!

Mexican Mocktail Recipe
Ingredients:
3 cups pineapple juice
1 can (14oz) sweetened condensed milk.
1 can (6oz) frozen orange juice concentrate, thawed
1/2 tsp coconut extract.
1 bottle (32oz) ginger ale, chilled (diet ginger ale can be used).

Directions:
Combine pineapple juice, sweetened condensed milk, orange juice concentrate and coconut extract in a large pitcher, stir well. Refrigerate covered (will keep up to one week).

To serve, fill individual glasses with crushed ice and pour mixture over ice. Top each glass with 1/3 cup ginger ale and serve with a fresh fruit slice perched on the glass rim or use a cocktail pick and pierce a cherry and fresh fruit cubes. Serve immediately.

TIP: for a Mexican cocktail (the adult version): add 1.5oz Captain Morgan Coconut Rum.

After School Instant Pizza Recipe
Ingredients:
1- 6 inch whole wheat tortilla
1 Tbsp (no salt added) tomato sauce
or
2Tbsp Basil pesto sauce.
1/4 tsp dried oregano
2Tbsp shredded reduced-fat Swiss or part-skim Mozzarella cheese.

Directions:
Preheat oven to 500 degrees F. Spread tomato sauce or basil pesto sauce over the tortilla, covering to the edges. Sprinkle with oregano, and then top with cheese. Place on pizza pan or baking sheet and bake for 5 minutes or until the tortilla is crisp and the cheese is bubbly. Healthy after school foods and snacks.

Quick Mexican Pizza Snacks Recipe
Ingredients:
3 English muffins, split and toasted
1- 16oz jar Tejano salsa, slightly drained (view product)
3/4 cup (3oz) shredded Italian cheese blend
Bell pepper julienne strips

Directions:
Preheat the oven to 350 degrees F. Split the English muffins and toast. Place the muffin halves on an ungreased baking sheet. Top each half with 1/4 cup salsa, sprinkle with 2 Tbsp cheese. Bake about 5 minutes or until cheese is melted and slightly browed. Garnish with julienne bell pepper. Serve while hot.

Hot Dog Burritos Recipe
Ingredients:
1- 16oz can pork and beans
1/3 cup ketchup
2 Tbsp yellow mustard (not dry)
2 Tbsp brown sugar
8 frankfurters (cooked)
8- 8inch flour or wheat tortillas

Directions:
Combine beans, ketchup, mustard and brown sugar in a medium saucepan. Bring to a mild boil over medium-high heat. Then, simmer 2 minutes. Arrange the frankfurters inside the heated tortillas and top with the bean mixture. Roll up jelly-roll style. Serve with freshly cut-up fruits.
