Ingredients:
3 cups pineapple juice
1 can (14oz) sweetened condensed milk.
1 can (6oz) frozen orange juice concentrate, thawed
1/2 tsp coconut extract.
1oz Captain Morgan coconut rum
1 bottle (32oz) ginger ale, chilled (diet ginger ale can be
used).
Directions:
Combine pineapple juice, sweetened condensed milk,
orange juice concentrate and coconut extract in a large
pitcher, stir well.
Refrigerate covered (will keep up to one week).
To serve, fill individual
glasses with crushed ice and pour mixture over ice. Measure
(optional) 1oz Captain Morgan rum and pour
over mixture. Top each glass with 1/3 cup ginger ale and serve with a
fresh fruit slice perched on the glass rim or use a cocktail
pick and pierce a cherry and fresh fruit cubes. Serve immediately.
