I would bet a case of salsa we just wrote our Christmas Holiday newsletter only a few months ago!! Our family is not ready for this! We have had a great year at the warehouse and even more in the kitchen. Let me tell you about food co-packing because there is always room for one more outstanding homemade recipe that should be on the store shelves!
If you wish to have a food product manufactured but do not want to do your own processing or have the capabilities to manufacture a food product, co-packing may be a good option. In this arrangement, you would contract with an existing food manufacturer with a commercial kitchen, to run your product according to your production and quality control specifications.

RECIPES:
Texas Cowboy Hash
1 pound lean ground beef
2 onions, sliced
2 green peppers, sliced into rings
1 clove garlic, chopped
2 tablespoons chili powder
1 teaspoon salt
1 teaspoon ground black pepper
1 jar Tejano salsa mild (view product).
3/4 cup raw rice

Preparation:
Cook beef, add onions, green peppers, garlic, chili powder, salt and pepper.
Cook until veggies are beginning to get tender, stirring frequently to crumble meat - about 3 minutes.
Add salsa and rice. Put in buttered 2-quart casserole, cover. Bake at 350 degrees F for 40 minutes, or until rice is cooked, stirring once or twice.

Huevos Rancheros
1 flour tortilla
1 egg, fried
1/4 cup salsa (view product)
Refried beans (view product)
Grated Monterey Jack cheese
sour cream
avocado slices

Preparation:
For each serving: place the tortilla in a baking dish. Put a thin layer of refried beans on the tortilla, and lay the fried egg on top of the beans. Put the salsa on top of the egg and cover with grated cheese.
Bake for about 20 minutes at 375 degrees or until the cheese is melted.
Garnish with sour cream and avocado slices, and serve with Mexican chorizo or sausage.

Spinach Enchiladas
1 onion, peeled and chopped
1 garlic clove, peeled and minced
3 tablespoons safflower oil
1/4 cup hot pepper, chopped
6 cups fresh baby spinach
8 corn tortillas
2 cups Tejano salsa (view product)
2 cups cheddar cheese, grated

Preparation:
In a skillet over medium heat, sauté onion and garlic in oil until golden. Stir in peppers, cook 3 minutes. Rinse spinach in water, transfer to skillet with water still clinging. Stir and cover, cook until wilted. Meanwhile, soften tortillas in oven, wrapped in a moist towel or foil. Place 1/4 cup filling in center of each tortilla. Roll up and place seam side down in oiled oven proof dish. Smother with salsa and cheese. Bake at 350 F until heated and bubbly.

Vegetables: Orange, red or green colored peppers are socked with beta-carotene, also vitamin C, iron, calcium and potassium. Excellent sources would be broccoli, spinach, carrots, sweet potatoes, pumpkins and peppers.

Beans: Lower cholesterol; balances blood sugar levels; high in fiber; cancer prevention properties.

Beets: Prevent cell mutation that can lead to cancers; good source of iron.

Bell Pepper: Antioxidant; nutrient dense; good source of vitamin C. Sweet red peppers are high in beta-carotene; good for asthma; prevents cataracts; cancer prevention properties.
