HISTORY OF CINCO DE MAYO
Cinco de
Mayo, Spanish for the 5th of May, marks the victory in 1862 of the
Mexican Army, under the command of General Ignacio Zaragoza, over the French
troops at the battle of Puebla. It is celebrated in the US among the
Mexican-American population mainly in California, Arizona, New Mexico and
Texas.
The French, under the rule of Emperor Napoleon III, had landed in Mexico five
months earlier on the pretext of collecting Mexican debts from the newly
elected government of the President of the United States of Mexico, Benito
Juarez. Emperor Napoleon III and his army, who detested the United States and
had grandiose plans to impose a monarchical government upon the nations of
Central & South America, began an occupation of Mexico. Four thousand Mexican
soldiers defeated the French and a traitor Mexican army of eight thousand at
Puebla, Mexico, about 100 miles east of Mexico city on May 5, 1862. The battle
of Puebla was important for several reasons. This victory demonstrated to
ordinary Mexican citizens that they could defeat a superior fighting power, it
instilled national pride, it improved the international stature of President
Juarez and it discouraged further American & European invasions of Mexico and
Latin America. It remains today a celebration of cultural pride and a show of
respect for the rights of people everywhere.
The biggest misconception about Cinco de Mayo is that it commemorates Mexico’s
Independence Day. In fact, that holiday is celebrated on September 16th
when Mexico atchieved its independence from Spanish rule in 1821.

A patio or backyard provides a great setting for a Cinco de Mayo
celebration. Stringing chili pepper lights

above or around your location or even on a roof or a fence adds a playful
touch. Cover tabletops with brightly colored plastic tablecloths such as
yellow, red, turquoise, orange or other festive patterns you might have
available, then set about bouquets of colorful crepe paper flowers and Mexican
table flags.
Pancho Villa’s Secret Dip – An
old favorite
1 can refried beans
1 tomato chopped
1 can black olives, chopped
1 4oz. can green chilies
1 8oz. carton guacamole
2 cups grated shredded sharp Cheddar cheese
1 cup Tejano salsa

1 pint sour cream
Layer ingredients in the order given in a 9x5 serving dish. Serve with
tortilla chips.
Best double this recipe! You’ll need it!

Chili Con Queso
Ingredients:
1 lb.
Velveeta Cheese
1/2 cup Tejano salsa

1/8 cup Milk
Directions:
Place ingredients in saucepan and heat over low heat, stirring frequently
until all melted together. For microwave, place ingredients in a bowl on low
power. Check frequently (stir) until melted to desired consistency.
Note:
In Tex-Mex cooking, cheddar cheese is the first choice. This is the pure
difference between Mexican food and Tex-Mex food. In Mexico, goat's cheese
is used for traditional dishes. In Tex-Mex cooking, cheddar, Monterrey Jack
and even American cheese is the cheese of choice.
